Winery
In the 1950s Bill and Kaye Dhillon bought a 170 hectare sheep farm in the Macedon Ranges. As a new venture with their son Michael they established the Bindi vineyard in 1988 and in 1997 built their winery.
In the cool climate of Mount Macedon the vineyard is 500 metres above sea level. Soils are shattered quartz over siltstone, sandstone and clay. Generally infertile, they produce low yields. Since 2005 Bindi has implemented organic viticulture to promote soil life and balance. They make compost, cultivate under the vines and aerate the soil to keep the vines healthy. Bindi see themselves more as winegrowers than winemakers creating the finest fruit in the vineyard.
Bindi make some of Australia's best Pinot Noir and Chardonnay. Block 5 and Kaye Pinot Noir and Quartz Chardonnay stand out. Fastidious small vineyard winemaking has achieved impressive results.
