Kaye Pinot Noir
Wine
Bindi Kaye Pinot Noir is named in honour of the late Kaye Dhillon, mother of vigneron Michael Dhillon. It draws from the winery's most elevated Macedon Ranges planting, Block K.
The vineyard lies 500 metres above sea level and is characterized by outcrops of fractured quartz, mudstone and sandstone.
The wine is a blend of two select Pinot Noir parcels, 115 Clone and MV6. They are fermented using only natural yeasts, then delicately pressed to French oak barrels for ageing on lees.
Only the best barrels are selected for the final blend. The wine sees minimal racking, restricted filtration and no fining.
Deep red, Bindi Kaye Pinot Noir is earthy with red and dark fruit flavours. A wine of fragrance, structure and complexity. Cellaring potential is seven years.
