Aspiring to rival the great French Champagne houses, the Goelet family established Clover Hill on an old dairy farm in 1986. Today they are one of the few Australian wineries solely producing méthode traditionnelle sparkling wines.
Perched atop a valley with a clear view to Bass Strait, Clover Hill's vineyard at Pipers River capitalizes on the site's cool maritime climate, ancient volcanic soils and natural amphitheatre. It is ideally suited to the classic trinity of Champagne varieties Chardonnay, Pinot Noir and Pinot Meunier. In 2008 they established a second vineyard in the Coal River Valley near Hobart. Clover Hill brings a distinctive Tasmanian style to traditional French Champagne making.
Clover Hill's premium, limited release Prestige Blanc de Blancs and Cuvée Exceptionnelle are the lead wines. Their sparklings were served at Tasmanian born Princess Mary’s and Prince Frederick of Denmark's wedding.
