Clover Hill Cuvée Exceptionnelle Blanc de Blancs is made from a selection of premium Chardonnay parcels grown at the Clover Hill vineyard in north-eastern Tasmania.
Fruit is sourced from specific sections based on altitude, soil depth and mesoclimate, so a number of different cuvées can be produced each season. Each batch is whole bunch pressed and fermented separately.
Clover Hill draws on traditional French winemaking techniques to produce their sparkling wines. Méthode traditionnelle is a highly specialized process requiring considerable expertise.
After fermentation the base wine is bottled along with yeast and a small amount of sugar (known as tirage). This second fermentation results in a natural sparkling wine. The wine ages on lees in bottle for at least three years before disgorging.
During maturation the bottle is rotated and turned upside down so the lees eventually settle in the neck where they are frozen and removed.
In the final stage the bottle is filled to replace the missing volume. The unique Clover Hill style is achieved by inserting selections from reserve wines aged in French oak foudres.
Pale straw, Clover Hill Cuvée Exceptionnelle Blanc de Blancs is driven by natural acidity with flavours of fresh citrus and a persistent soft minerality.
Made only in limited quantities. Cellaring potential is eight years.
