Penfolds Bin 707 Cabernet Sauvignon was first made in 1964. Named by an ex-Qantas marketer after the 707 passenger jet, it is a Cabernet Sauvignon reflection of Grange.
Like Grange everything about Bin 707 is larger than life. Bin 707 and Grange are distinctive because they focus on complexity and scale rather than varietal or regional character. All the many facets of the wine change through its long life.
The scarcity of Cabernet fruit of the desired standard limits the amount of Bin 707 made in any one vintage. It was not made from 1970-1975 nor in 1981, 1995, 2000, 2003 or 2011 when the fruit went to other wines.
Grapes are sourced from multiple South Australian vineyards and regions. This intensely flavoured wine completes fermentation and maturation in 100 per cent new American oak for 20 months.
Deep inky red, Penfolds Bin 707 Cabernet Sauvignon is a wine of big, sometimes immense, structure. Its ripe, pronounced tannins and smoky oak are usually swallowed up by the fruit in the wine's first few years.
It ranks among Australia's finest Cabernets. Cellaring potential is 25 years.
