Former chef and sommelier David Chapman founded Allies Wines in 2003, making just a few barrels of Pinot Noir. Though his output has since increased, it remains limited by the area of vines Chapman can manage single handed.
The Allies Wines mission is to showcase the diversity of Mornington Peninsula Pinot Noir. Each distinct area within the region – Tuerong, Merricks and Balnarring – has variance in climate, altitude, aspect and soil, producing discernibly different expressions of Pinot Noir. The vines are managed with an approach best described by the French phrase lutte raisonnée, literally meaning 'reasoned fight', in practise it is a pragmatic approach to organic viticulture.
Allies Wines produce single district Pinot Noirs from each district. Minimal intervention limits anything that could detract from the wine's natural character. Their Assemblage Pinot Noir is a Mornington Peninsula blend.
