Allies Wines Assemblage Pinot Noir is the only Allies wine sourced from multiple Mornington Peninsula districts. It is a composite blend – an assemblage – of grapes from Balnarring, Merricks and Tuerong.
The fruit is rigorously sorted in the vineyard and winery, then destemmed and cold soaked. Fermentation occurs with no added yeasts, followed by extended maceration until the tannins are supple. Malolactic fermentation occurs naturally.
The wine matures in a vast, thick staved French oak vat for 10 months. The larger barrel allows the wine to age more slowly with less oxygen, ensuring it retains the fruit's delicate aromas and flavours.
Bright crimson, Allies Wines Assemblage Pinot Noir is vibrantly flavoured with a silky, supple structure. Cellaring potential is seven years.
