Linda Morice and Vaughn Dell lived, worked and studied in the Hunter Valley, Yarra Valley and Margaret River before returning to their birthplace of Tasmania. In 2005 they established Sinapius in northern Tasmania's Pipers Brook region.
Five kilometres inland from the Bass Strait, Sinapius is characterized by a strong maritime influence providing a long even growing season. Modelled on the vineyards of Burgundy, their vines are densely planted. Though more labour intensive close planting produces low fruit yields but with maximal intensity and expression of site. Sinapius consider themselves not simply winemakers but winegrowers. For them, there is no separation between vineyard and winery.
Sinapius's wines are made exclusively using estate grown fruit. Their Enclave Pinot Noir leads, followed closely by La ClairiƩre Pinot Noir. Vaughn's Jardin Gamay is another highlight.
