Will Bryon, Sam Middleton and Kaspar Hermann met working stints at Coldstream Hills and hatched a plan to make wine together. They contributed the last letters of their surnames and founded Onannon in 2008.

Will is now the chief winemaker at Stonier, and Sam has taken over winemaking at his family estate Mount Mary in the Yarra Valley, where he and Kaspar have worked. The trio take a hands on approach to the winemaking. The wines are made in a small, purpose built winery on the Mornington Peninsula. Strong relationships with their growers, wines that speak of place, and limited quantities define the winemaking at Onannon.

Onannon focus on Pinot Noir from Gippsland and the Mornington Peninsula. They also produce Mornington Peninsula Chardonnay and smaller amounts of Shiraz, Pinot Gris and Pinot Gris Rosé.
