St Hallett Dawkins Shiraz is sourced exclusively from the Dawkins Vineyard, tucked away five kilometres outside the Eden Valley township.
The grapes ferment in two parcels, spending up to 15 days on skins with several short duration pump overs daily. Both batches mature in 20% new French oak for 12 months. Only the finest barrels are selected for bottling.
Inky garnet, St Hallett Dawkins Shiraz is highly aromatic with herbal and red berry characters that follow onto the palate. Cellaring potential is eight years.
