Chardonnay

Seville Estate Chardonnay is sourced exclusively from estate vines in the cooler southern part of the Yarra Valley. All the grapes are handpicked.
The fruit is gently whole bunch pressed and the juice is settled overnight. It is gravity fed to French oak barrels of various sizes, around 30% new, for natural fermentation.
Following primary fermentation, the wine matures on lees for 10 months. Malolactic fermentation is not encouraged. The wine is then racked, cold stabilized and filtered to bottle.
Pale yellow in colour, Seville Estate Chardonnay is a crisp, tightly structured wine with citrus flavours and refined acidity. Cellaring potential is seven years.
