Zephyrus Shiraz

Sons of Eden Zephyrus Shiraz is named after the Greek god of the west wind. It blends of parcels of fruit from the Barossa and Eden Valleys, regions which are regularly buffeted by cooling westerly winds.
A variety of fermentation techniques are used, all involving extended skin contact and gentle hand plunging. The parcels see varying levels of whole bunch inclusion.
Each batch is pressed to a combination of new and seasoned French oak hogsheads for 15-18 months of maturation. The wine is then blended, naturally clarified and bottled without fining and filtration.
Deep crimson, Sons of Eden Zephyrus Shiraz has a concentrated, focused core of red fruit and supple, layered tannins providing length. Cellaring potential is seven years.
