Passing Clouds Estate Pinot Noir draws from the estate vineyard at Musk, located in the Macedon Ranges: the coldest grape growing region on the Australian mainland:
The fruit, including some left as whole bunches and whole berries, typically sees pre-ferment cold soaking before fermentation. The fermenting juice is mostly hand plunged.
After up to three weeks on skins, the wine is transferred to barrel for malolactic fermentation and 12-24 months of maturation.
Bright red purple, Passing Clouds Estate Pinot Noir has sweet blue fruit flavours balanced by potent acidity and fine tannins. Cellaring potential is seven years.
