Estate Chardonnay
Wine
Passing Clouds Estate Chardonnay draws from the estate vineyard at Musk, atop a north facing slope on the Great Dividing Range. It is one of Australia's coolest mainland sites.
Most of the fruit is crushed, pressed, settled and transferred to oak. Around one third spends 24 hours on skins before pressing. Where possible ambient yeasts are used for fermentation.
All barrels are stirred fortnightly and undergo partial malolactic fermentation. Maturation occurs over 10 months in new and seasoned French oak hogsheads.
Golden straw, Passing Clouds Estate Chardonnay is a velvety wine, held upright by a striking acidity and racy citrus flavours. Cellaring potential is five years.
