Levantine Hill Mélange Traditionnel Blanc is inspired by the Bordelaise tradition of blending compatible grape varieties to create a wine greater than the sum of its parts.

It blends Sauvignon Blanc with Semillon and a small amount of Viognier. All the fruit is harvested and sorted by hand, then whole bunch pressed.

The juices are handled oxidatively to subdue intense varietal expression and allow more subtle nuances to develop. Each batch is then filled to French oak for fermentation with a mix of wild yeasts and cultured neutral yeast strains.

The oak comprises large a foudre (vat) and smaller format barrels. A portion of the small casks are new. After ageing for nine months, the wine is prepared for bottling.

Deep yellow, Levantine Hill Mélange Traditionnel Blanc has complex fruit characters with distinct saline minerality and a precise acid line. Cellaring potential is eight years.
