Hillcrest Road Vineyard Pinot Noir

Circe Hillcrest Road Vineyard Pinot Noir is grown in the deep red basalt volcanic soils of Hillcrest Road Vineyard at Red Hill on the Mornington Peninsula.
The fruit, all MV6 clone, is fermented entirely as whole bunches – no destemming. Gentle daily foot treading begins after seven days, progressively increasing in vigour over the next week.
The wine is then pressed and transferred to small French oak barrels for malolactic fermentation. The barrels are left untouched over 12 months of maturation on full lees without racking.
Pale purple, Circe Hillcrest Road Vineyard Pinot Noir has structured textural fruit flavours, savoury tannins and a long finish. Cellaring potential is five years.
