Grace Farm Chardonnay is made with sustainably farmed Gin Gin clone Chardonnay grown in the rich gravelly loam of Wilyabrup, Margaret River.
The mix of vine clone and soil structure produces perfectly ripe fruit that retains a high natural acidity. It is handpicked at optimum ripeness in the cool of the morning.
The fruit is whole bunch pressed into French oak barrels, where wild yeasts complete fermentation to dryness. Plenty of lees are left in the juice to provide depth and texture. It matures in barrel for nine months.
Pale straw, Grace Farm Chardonnay has intense tropical fruit weight and a long finish laced with delicate saline acidity. Cellaring potential is five years.
