Lenswood Chardonnay
Wine
Geoff Weaver Lenswood Chardonnay is sourced from a single vineyard perched 500 metres above sea level at Lenswood in the Adelaide Hills.
A cool region, Lenswood sees greater vintage variation than safer warm regions. However, it is worth the price for producing fine wines of distinctive character.
The fruit is chilled to below 5°C for whole bunch pressing. After settling, the juice is racked to half new, half second use French oak barrels with some solids. Here it ferments with wild yeasts to dryness.
All barrels are left on lees for 12 months with stirring to build creamy, nutty yeast lees elements in the wine. A quarter are inoculated for malolactic fermentation.
Light straw green, Geoff Weaver Lenswood Chardonnay is fresh and delicate with a drying savoury grip at the finish. Cellaring potential is five years.
