Yelverton Reserve Cabernet

Forester Estate Yelverton Reserve Cabernet is released only in years of exceptional fruit quality. Though mostly Cabernet Sauvignon, tiny portions of Cabernet Franc, Petit Verdot and Merlot are added in some years.

The fruit is gently crushed and some of the free run juice is drained away. This increases the skin to juice ratio and intensifies the flavour, aroma and body of the wine.

Open fermentation occurs with the cap of grape skins kept submerged by heading down boards. The ferment receives daily pump overs. Once pressed, the best parcels of wine mature in fine grained French oak for 20-22 months.

The wine is carefully blended three months prior to bottling. It then develops in the winery's temperature controlled cellar for five years before release.

Deep red purple, Forester Estate Yelverton Reserve Cabernet is medium bodied with dark fruit flavours, fine yet ample tannins and savoury oak complexity. Cellaring potential is 10 years.
