Forester Estate Sauvignon Blanc fruit is handpicked early in the morning from the Home Block at Yallingup in Margaret River. The vines are trained to an open lyre trellis.

A portion of the wine is fermented in stainless steel with a known yeast strain. The remainder ferments in new and seasoned French oak barrels. Select parcels use wild yeasts and are kept on medium to high solids.

Pale straw green, Forester Estate Sauvignon Blanc has a rich creamy texture, tropical fruit flavours and a fine line of acidity. Cellaring potential is three years.
