Cabernet Sauvignon

Forester Estate Cabernet Sauvignon is sourced from a selection of premium Cabernet vineyards in northern Margaret River. The vines are meticulously managed to ensure the fruit ripens fully.

This wine blends Cabernet Sauvignon with small amounts of Cabernet Franc and Petit Verdot. After a morning harvest, the fruit is delivered to the winery and immediately processed.

Fermentation occurs in small open fermenters with heading down boards, and is controlled at 25-29°C. Each day, the juice is drained and returned over the top of the grape skins to extract colour, flavour and tannins.

The wine is then pressed to a blend of new and seasoned French oak barrels to complete malolactic fermentation. It matures for 18 months prior to bottling.

Deep red purple, Forester Estate Cabernet Sauvignon has plump dark fruit flavours with fine tannins, soft acidity and a long, firm finish. Cellaring potential is 10 years.
