West Cape Howe Book Ends Cabernet Sauvignon is made with a selection of fruit from the Karri Oak, Langton and Windy Hill Vineyards. The very best blocks of these Mount Barker vineyards are reserved for this wine.
Each batch of fruit is kept separate for fermentation, receiving regular pump overs to maximize colour and flavour extraction. A portion is left on skins post ferment.
After pressing, the wine is aged for 18 months in one third new French oak barrels. In some vintages a touch of Malbec is added prior to bottling, which contributes richness and complexity to the final blend.
Deep crimson, West Cape Howe Book Ends Cabernet Sauvignon has rich dark fruit flavours, hints of sweet, smoky French oak and slightly chewy tannins. Cellaring potential is five years.
