Chardonnay

Thompson Estate Chardonnay is grown on the winery's home vineyard at Wilyabrup in Margaret River. Most of the fruit is handpicked, with the remainder selective machine harvested.

The fruit is chilled, lightly pressed and cold settled before the juice is transferred to new and seasoned French oak barrels. Fermentation takes place with natural yeasts from the vineyard and specially selected yeast strains.

Each batch is left on lees for nine months with regular bâtonnage (stirring). The wine is blended and filtered prior to bottling.

Straw green, Thompson Estate Chardonnay has vibrant stone fruit flavours with soft texture, supple oak and a persistent line of acidity. Cellaring potential is five years.
