Ten Minutes by Tractor Wallis Pinot Noir is made with carefully selected parcels from the highest performing blocks of the Wallis Vineyard. It is produced only in vintages that reach a quality benchmark.
Most of the grapes are destemmed but kept as whole berries. They are chilled in concrete tanks with a small whole bunch inclusion in some vintages.
The fruit is chilled and held in tank for several days, delaying the start of indigenous yeast fermentation. During the ferment, the juice is pumped over with some manual plunging towards the end.
After 25-30 days on skins, the wine is pressed and transferred to French oak barrels, one third new. It sees natural malolactic fermentation and 12 months of maturation.
Deep vermillion, Ten Minutes by Tractor Wallis Pinot Noir has brambly dark fruits, spicy whole bunch character and refined tannins.
A clear expression of Mornington Peninsula Pinot Noir. Cellaring potential is 10 years.
