Whalebone Vineyard Cabernet Shiraz

Tapanappa Whalebone Vineyard Cabernet Shiraz is made with hand selected parcels of Cabernet Sauvignon from the Whalebone Vineyard. It grows atop a limestone cave containing a 35 million year old whale skeleton.
The blend is typically 85% Cabernet Sauvignon and 15% Shiraz. The Shiraz parcel is sourced from nearby vineyards. Each variety is vinified separately.
Destemmed and partially crushed fruit is chilled in tubs, where it sees cold maceration. Once inoculated, it ferments with daily hand plunging. The tubs are then sealed for post ferment maceration.
The Cabernet and Shiraz are pressed separately to age in French oak barrels, around half new and the balance second use. After 18-20 months, the wine is racked and blended for bottling.
Deep red purple, Tapanappa Whalebone Vineyard Cabernet Shiraz has sweet dark fruit core, with grainy tannins providing a long, savoury finish. Cellaring potential is 10 years.
