Piccadilly Valley Chardonnay

Tapanappa Piccadilly Valley Chardonnay is handpicked from the winery's vineyards in the Piccadilly Valley, Adelaide Hills. The unique soil is based on a layer of calcsilicate rock many millions of years old.
The grapes are destemmed, roller crushed and chilled. After air bag pressing and gravity settling, the partially clarified juice is racked with its fluffy lees to one third new French oak barrels.
Fermentation occurs in the Piccadilly Valley's cool autumn temperatures with cultured yeast. The wine remains on full lees until summer, when it is racked for bottling.
Pale straw, Tapanappa Piccadilly Valley Chardonnay has bright fruit and crisp acidity. Its hallmark texture is followed by a long, savoury finish. Cellaring potential is five years.
