Tapanappa Foggy Hill Vineyard Pinot Noir is grown at Parawa at the apex of the Fleurieu Peninsula. Foggy Hill Vineyard lies just eight kilometres from the Great Southern Ocean.
Handpicked fruit is delivered to the winery in the Adelaide Hills. Some chilled whole bunches are placed into each fermenter, then the remaining fruit is destemmed, crushed and added on top.
After several days of cold soaking, the juice is inoculated for fermentation with daily hand plunging. The whole bunches at the bottom are progressively crushed to release their sugar.
The wine rests on skins for several days post ferment before gentle air bag pressing to oak barrels, one third new. Following malolactic fermentation on lees, it is racked and returned to barrel to age.
Dark purple, Tapanappa Foggy Hill Vineyard Pinot Noir is intense and brooding with ripe berry flavours. The tannins robust yet refined. Cellaring potential is seven years.
