Seppeltsfield Paramount DP898 Aged Flor Apera, made with the Palomino variety, is inspired by the Spanish Amontillado Sherry style.
The designation DP originates from the 'Duty Paid' mark given to wines in the mid-1900s, showing that the appropriate taxes – duty – had been paid to customs. Only then could the wine be released for sale.
The finest cut of free run juice is fermented and fortified with a neutral spirit. The wine gains complexity through the influence of a layer of yeast (flor), which is later removed to prompt oxidative maturation.
The wine then sees extended barrel maturation in the winery's solera nurseries, undergoing fractional blending to an average age of 48 years.
Amber with olive green hues, Seppeltsfield Paramount DP898 Aged Flor Apera has a striking balance of citrus peel flavours, nutty, smoky characters and vibrant acidity.
