Paramount DP273 Rich Rare Apera

Seppeltsfield Paramount DP273 Rich Rare Apera is the culmination of blending youthful and ancient components, inspired by the traditional Spanish and Portuguese method of fractional blending.
It comprises a complex array of varieties including Palomino and Grenache. The first cut of free run juice is fermented and fortified with a neutral spirit to a level that does not permit the growth of flor yeast.
Each variety is initially matured separately. Then begins the judicious process of blending sweeter fruit parcels with drier to create a style that is likened to Oloroso Sherry.
The wine is introduced to Seppeltsfield's solera nurseries. At bottling its average maturation is approaching 50 years in oak, featuring individual components over half a century in age.
Tawny in colour with amber hues, Seppeltsfield Paramount DP273 Rich Rare Apera is full and rich with upfront sweetness, wood smoke complexities and lively acidity.
Fully aged, it is ready to drink on release.
