Para 100 Year Old Tawny

Seppeltsfield Para 100 Year Old Tawny represents the single best parcel of fortified wine, selected and aged in the winery's Centennial Cellar for 100 years.
In 1878 Benno Seppelt singled out a puncheon of his finest single vintage Tawny and cellared it away, instructing that it not be bottled for 100 years. The first vintage was released a century later in 1978.
The tradition of laying down a barrel of the finest fortified wine each year continues today. Though its full composition is unknown, it includes Shiraz, Grenache and Mourvèdre.
The fruit is crushed in Seppeltsfield's gravity flow winery, then foot pressed. The wine is fortified with a brandy spirit and transferred to old oak barrels to rest in the Centennial Cellar.
Topping barrels are used to keep each vintage's dedicated 100 year old barrel as full as possible as the wine evaporates over time. The wine is transferred to progressively smaller barrels as it builds in concentration.
An opaque chocolate colour with golden hues, Seppeltsfield Para 100 Year Old Tawny is viscous and full bodied with dense dessert flavours, rich dried fruits and a mouth watering finish.
It has been referred to as 'the essence of wine'. Fully matured in barrel, it is ready to drink on release.
