Wine
Pauletts Andreas Shiraz sourced from an ancient block of vines at Polish Hill River in the Clare Valley. Andreas Wayman, the first Polish settler to the property, planted the vineyard in the early 1900s.
The grapes are hand processed. Fermentation takes place in open fermenters that are over 100 years old, made from slate mined at Mintaro a short distance east of the winery.
The wine is then sent to premium French and American oak barrels to mature for 20 months prior to bottling.
Dark red purple, Pauletts Andreas Shiraz is full bodied with vibrant dark fruit flavours. A fine tannin structure and acidity provide balance. Cellaring potential is 10 years.
