Paringa Estate The Paringa Shiraz is sourced from the winery's oldest block of Shiraz: just 15 rows of vines planted in 1985. It is only made in vintages where the quality justifies the premium label.
The Shiraz fruit, a marginal variety on the Mornington Peninsula, is handpicked from a north facing site of red volcanic soil. It is predominantly destemmed prior to cold soaking and inoculation with a selected yeast.
Fermentation is in a hand plunged, 3,500 litre French oak foudre. The wine then matures for 18 months in small French oak barrels, at least 40% new.
Deep red, Paringa Estate The Paringa Shiraz has a powerful savoury palate with blackberry, spice and liquorice flavours. Fine tannins provide structure and length.
It is the apex of Paringa Estate Shiraz. Cellaring potential is 10 years.
