Noon Winery Reserve Cabernet is made from small, thick skinned Cabernet Sauvignon berries from the Fruit Trees and Main Road Blocks of the Borrett family vineyard.
Located at Langhorne Creek and planted in 1972, their low yielding Cabernet vineyard is planted on deep alluvial clay loam on the Bremer River flood plain. The Borrett family are friends of the Noon's.
This late ripening variety is harvested towards the end of vintage. During open fermentation, the thick cap is frequently hand plunged to extract colour and tannins from the seeds and skins.
The wine is pressed in a manual basket press. Maturation is typically 18 months in one third new French oak. The wine is bottled on the property.
Medium red, Noon Winery Reserve Cabernet is packed with red berry varietal flavour. Full bodied and pure, it has abundant ripe tannins.
Produced only in the finest vintages. Cellaring potential is 10 years.
