Moss Wood Semillon is sourced from old, dry grown handpicked vines at Wilyabrup in the heart of Margaret River. Wilyabrup’s mild maritime climate avoids the extremes of both summer and winter.
The destemmed grapes are pressed to a stainless steel tank and the juice is cold settled for 48 hours. The clear juice is then racked to a second stainless steel tank for fermentation with multiple yeast strains.
Pale straw, Moss Wood Semillon is a classic Semillon with green apple and fig flavours and a taut, refreshing finish. While best drunk young, cellaring potential is five years.
