Moss Wood Cabernet Sauvignon was planted in 1969. A founding Margaret River estate Moss Wood’s Cabernet is one of the original Margaret River Cabernets.
The fruit is destemmed into small, open fermenters and multiple yeast cultures added. The ferments do not exceed 30°C and are hand plunged thrice daily.
Malolactic fermentation is in stainless steel tanks. The wine is then racked to new and seasoned French oak to age.
At 18 months the Cabernet is blended to tank with small amounts of Petit Verdot and Cabernet Franc, then returned to barrel to age further. Prior to bottling the wine is racked from barrel and filtered.
Deep bright red, Moss Wood Cabernet Sauvignon balances ripe, generous fruit flavours with supple, velvety texture and vibrant acidity.
An outstanding Margaret River Cabernet. Cellaring potential is 15 years.
