Ministry of Clouds McLaren Vale Shiraz combines fruit from two McLaren Vale vineyards: an old, dry farmed site at Blewitt Springs and the winery's vineyard atop the Onkaparinga Gorge at Seaview.
The grapes are handpicked. A small portion are kept as whole bunches while the balance is gently destemmed to retain whole berries.
After two days of cold soaking to capture aromatics, the juice begins fermentation naturally. The ferments are hand plunged or pumped over and tasted twice daily to assess flavour and colour extraction.
Once it is gently basket pressed the wine matures in a mixture of new and seasoned French oak foudre (vats) and puncheons.
Crimson red, Ministry of Clouds McLaren Vale Shiraz has layers of blue and red fruit flavours, gentle oak creaminess and a savoury tannin line. Cellaring potential is seven years.
