Marchand & Burch Chardonnay draws on vineyards in the Great Southern region of Western Australia, one in Porongurup and one in Mount Barker. Depending on the vintage either one or both sites make up the blend.
All the fruit is handpicked. The individual parcels are cooled in vented crates before sorting and whole bunch pressing to extract only the finest free run juice.
The juice ferments naturally in a mix of new and seasoned French oak barrels. Beginning late in the ferment, the lees are stirred weekly until sugar dryness is reached.
Each parcel matures on lees for nine months and may undergo malolactic fermentation. After blending to tank the wine receives minimal fining before bottling.
Pale straw, Marchand & Burch Chardonnay is focused and elegant, with rich fruit flavours, a silky mouthfeel and a fine mineral acidity. Cellaring potential is eight years.
