Majella Cabernet Sauvignon, first produced in 1994, is considered among Coonawarra's finest Cabernets. It is sourced from the eastern edge of the region's famous strip of terra rossa soil.
The fruit begins fermentation in both static and rotary stainless steel fermenters. It is transferred to 300 litre barrels to complete the process. The wine is then aged for 18 months in new and second use French oak hogsheads.
All parcels of Cabernet Sauvignon are kept separate throughout the winemaking. Each is assessed for quality before blending and bottling.
Dark magenta, Majella Cabernet has a fresh, structured palate of dark fruit and minty notes, supported by fine tannins and long length. Cellaring potential is 12 years.
