Houghton Jack Mann Cabernet Sauvignon is the flagship wine. It honours Jack Mann, who presided over 51 consecutive vintages as Houghton's winemaker, and his significant influence on the wine industry.
The fruit is handpicked from a small patch of the Justin Vineyard at Frankland River. Planted in 1971, the vines are the original Houghton clone of Cabernet Sauvignon selected by Jack Mann.
The grapes, including a small portion of Malbec, are sorted and destemmed to small open top fermenters. Fermentation occurs with indigenous yeasts and routine hand plunging.
At dryness, the wine is pressed and transfers to half new French oak barrels for malolactic fermentation and maturation. After 15-18 months in barrel, the components are blended, filtered and bottled.
Deep garnet purple, Houghton Jack Mann Cabernet Sauvignon is sumptuously layered. Its fruit and oak are seamlessly integrated with firm, fine grained tannins. Cellaring potential is 15 years.
