Flowstone Sauvignon Blanc is sourced from a single vineyard at Karridale, one of the southernmost and coolest parts of Margaret River. The vines are tended entirely by hand, from pruning to harvest.
The handpicked fruit is cooled overnight, then whole bunch pressed the next day. Processing it as whole bunches helps deliver nuanced and textured wines.
After settling overnight, the cloudy juice is put to barrel for fermentation, typically larger format seasoned oak. It remains in barrel for around 12 months with occasional stirring to suspend the lees.
The wine is blended, minimally find and filtered prior to bottling. Once in bottle, it relaxes for a further 18 months before release.
Pale straw, Flowstone Sauvignon Blanc has strong but not overpowering tropical fruits with textural oak complexity and great length. Cellaring potential is eight years.
