Chardonnay
Wine
Flowstone Chardonnay is handpicked from a single vineyard at Karridale in southern Margaret River. Here the fruit ripens later, retaining natural acids while developing varietal character.
The grapes are whole bunch pressed. After settling overnight, the turbid juice is racked to new and seasoned French oak barrels for fermentation with cultured yeast. Malolactic fermentation follows.
The wine spends around 12 months in barrel on lees, stirred occasionally. It is blended, fined and filtered for bottling, then left to rest in bottle for two years before release.
Pale straw green, Flowstone Chardonnay walks a tightrope of generous fruit, integrated oak and a refined chalky acid finish. Cellaring potential is 10 years.
