Eldridge Estate Clonal Blend Pinot Noir is made from seven clones of Pinot Noir grown in the estate vineyard at Red Hill, picked as the individual clones reach their ideal mix of flavour and acid.
The fruit is destemmed but not crushed. Whole berries are soaked for several days before wild yeast fermentation. Fermentation lasts nearly two weeks with daily plunging, followed by a short post ferment soak.
The wine transfers to one third new French oak barrels for malolactic fermentation and maturation.
Dark ruby, Eldridge Estate Clonal Blend Pinot Noir is sumptuous with rich, red berry fruit flavours, crisp acidity and seamless length. Cellaring potential is seven years.
