Dandelion Vineyards Lionheart of the Barossa Shiraz draws from a vineyard of ancient, gnarled vines, many over 100 years of age. They are grown on their own roots in some of the oldest soils on the planet.
This Barossa Valley site is the 'Lionheart' of Dandelion Vineyards.
The fruit is gently crushed as whole bunches and naturally open fermented with twice daily hand plunging. After one week the juice is carefully basket pressed to French oak barrels to complete fermentation.
The wine undergoes 18 months of maturation in the same barrels, racked once. It is bottled without fining or filtration to capture the essence of the vineyard.
Deep violet, Dandelion Vineyards Lionheart of the Barossa Shiraz has a ripe yet restrained fruit profile, with fine layers of savouriness, minerality and tannins. Cellaring potential is 10 years.
