Craiglee Chardonnay is handpicked from the winery's cool climate vineyard in Sunbury, Victoria. The grapes are picked riper than is fashionable for Chardonnay.
At the 1860s winery the grapes were taken by horse and dray to the upper level, then fed to the levels below to ferment and mature in barrel, taking advantage of the land's natural slope.
Today the juice is still moved to French oak via the gravity feed system. There is minimal lees stirring and no malolactic fermentation. The wine ages for 10 months in oak, about 20 per cent new.
Pale straw green, Craiglee Chardonnay has focused stone fruit flavours, abundant natural acidity and a clean, dry finish. Cellaring potential is seven years.
