Wine
Clarendon Hills Astralis Syrah is the leading wine. It is sourced from Blewitt Springs in McLaren Vale from low yielding, dry grown vines planted in 1920.
The fruit is picked over several passes to ensure optimal ripeness. Partial whole berries and whole bunches wild ferment in open vats with varied maceration periods. All pressings are returned to the barrel.
The wine matures for 18 months in 100 per cent new tight grained French oak. The final barrels are hand selected. It is bottled onsite without fining or filtration.
Dark crimson, Clarendon Hills Astralis Syrah has a kaleidoscope of flavours that give way to structured velvety tannins, and a long, elegant finish.
One of Australia's best Syrahs. Cellaring potential is 30 years.
