Wine
Circe Pinot Noir draws from three small vineyards on the Mornington Peninsula. Each produces small crops of premium fruit.
Approximately half the grapes are included as whole bunches to add layers of complexity to the final wine. Throughout fermentation, the cap of grape skins is punched down. The wine matures in oak.
Deep vermillion, Circe Pinot Noir has lifted red fruit flavours with fine tannic structure. Cellaring potential is five years.
