Castle Rock Estate Diletti Chardonnay is estate grown on the eastern slopes of the Porongurup mountain. The vineyard's cool climate and elevated northerly aspect results in intensely flavoured wines.

The grapes are crushed and fermented in French oak barrels, one third new. Natural yeasts and the inclusion of some solids enhance the complexity of the final wine, as does maturation on yeast lees.

After 10 months of ageing the wine is bottled on site.

Bright straw, Castle Rock Estate Diletti Chardonnay has fresh citrus and stone fruit flavours, subtle oak and a structured natural acidity. Cellaring potential is seven years.
