Boireann La Cima Tannat is grown 870 metres above sea level on the Granite Belt in Queensland. The variety, uncommon in Australia, originates from Madiran in France.

Tannat vines produce large bunches of thick skinned grapes. To ensure the fruit develops to ripeness, typically half the bunches must be crop thinned and dropped to the vineyard floor each year.

The fruit is open fermented on skins for seven days. Once basket pressed, the wine is sent to seasoned French oak barrels to finish malolactic fermentation and age for 11 months. It is racked just once during maturation.

Dense black, Boireann La Cima Tannat, made in limited quantities, is full bodied with rich fruit flavours, formidable tannins and a long dry finish. Cellaring potential is 20 years.
