Bellwether Coonawarra Cabernet Sauvignon is sourced from the isolated Coonawarra region, dominated by soils formed over an ancient limestone coastline. These soils – the famed terra rossa – are synonymous with Cabernet.
The fruit is handpicked to ensure the best parcels are selected and the vineyard's natural yeasts are preserved. Fermentation takes place using these yeasts.
After around four weeks on skins the wine is gently basket pressed. It is then matured in tight grained French oak barrels, only a small proportion new so the expression of the site is not overshadowed. No fining is required.
Bright garnet, Bellwether Coonawarra Cabernet Sauvignon is a classic cool climate Cabernet with lifted fruit aromas and long, fine tannins. Cellaring potential is 18 years.
