Bellarmine Riesling Select is a sweet style of Riesling, made from grapes harvested late into the Pemberton growing season.

Some of the fruit is allowed to develop Botrytis: a mould that naturally concentrates the sugars in the fruit. It is well suited to sweet Rieslings and is a sought after character in the famous Sauternes wines of Bordeaux in France.

Fermentation is carefully controlled in stainless steel tanks without the influence of oak. At the appropriate balance of acid, sugar and alcohol the ferment is stopped by chilling the wine.

Pale straw, Bellarmine Riesling Select is a sweet, aromatic wine full of tropical fruit flavours balanced by a high natural acidity. Cellaring potential is 12 years.
